Pumpkin Recipe Demonstrations Thursday by 46’s Chef John

(NC Research Campus, Kannapolis, NC- October 24, 2012)- Today is National Food Day, a national movement to promote healthy and sustainable food. In Kannapolis, the celebration continues tomorrow with Chef John Blumreich of restaurant Forty-Six at the Kannapolis Farmers Market, downtown at 120 West Avenue in the Old Cannon Towel Store.

Starting at 4 pm, Chef John will enlighten his audience on the health benefits of pumpkin while demonstrating how to cook pumpkin soufflé and pumpkin soup. Samples will be available for tasting.

Like the other members of the squash family, pumpkin is a healthy food with antioxidants and beta-carotene that converts to vitamin A in the body. A diet high in beta-carotenes is linked to a reduced risk for developing certain types of cancer and heart disease. Pumpkins are also low calorie, low fat and contain dietary fiber, potassium, calcium, iron, magnesium, zinc, selenium, vitamin C, niacin, folate and vitamin E.
