2 large, ripe avocados
1 cup black beans, rinsed and cooked
½ cup chopped tomato
1 T lime juice (preferably fresh)
chopped cilantro, add to taste
1 cup Mexican blend shredded cheese (optional)
1 cup plain Greek yogurt (optional)
Peel avocados and mash with a fork. Add lime juice, black beans, and tomato. Stir. Add cilantro to taste. Add cheese on top if desired. Serve guacamole with a side of plain Greek yogurt and your favorite tortilla or pita chips.
This recipe feeds one very hungry person (like myself) or two moderately hungry people. It’s easy to double up to serve at a party though! Enjoy!
