ASU, Dole and NASCAR’s Hendrick Motorsports Team Up for New Findings on Vitamin D

Appalachian State University Human Performance Laboratory at the NC Research Campus teamed up with NASCAR’s Hendrick Motorsports for a study sponsored by Dole Food Company. The goal of the study was to determine if a Portobello mushroom powder rich with vitamin D2 through exposure to ultraviolet light would have any effect on muscle function, exercise-induced muscle damage and delayed onset of muscle soreness. The results were surprising even to the investigators. Vitamin D2 supplementation was associated with higher levels of muscle damage after intense exercise.
